Alexandre Filaine Cuvee Speciale NV
Fabrice Gass is based in Damery, Montagne de Reims where he produces about 4000 bottles a year. Until recently he worked as a winemaker at Bollinger, but he now focuses fully on his own estate. Fermentation is done in probably the oldest oak and acacia barrels we've seen in Champagne, some of them are from 1937.
Cuvee Speciale is made from 45% Pinot, 35% Chardonnay and 20% Pinot Meunier. The wine does not go through malolactic fermentation and has a dosage of 7g/l.
Lovely mousse, round and soft fruit showing the Montagne de Reims expression. The finish is long with notes of bread and brioche.
