Alexandre Filaine Cuvée DMY NV
Fabrice Gass is based in Damery, Montagne de Reims where he produces about 4000 bottles a year. Until recently he worked as a winemaker at Bollinger, but he now focuses fully on his own estate. Fermentation is done in probably the oldest oak and acacia barrels we've seen in Champagne, some of them are from 1937.
DMY is made from 45% Pinot, 35% Chardonnay and 20% Pinot Meunier and comes exclusively from 2005 and 2006 vintages. The wine does not go through malolactic fermentation and has a dosage of 4g/l. It's more complex than the Cuvee Speciale, and expresses aromas of ripe stony fruit combined with wonderful refreshing acidity.
