Val de Mercy Chablis 2015
Val de Mercy are situtated in the south of the Chablis region and make wines in a very typically Chablis style, with absolutely no oak, and a mineral fresh led style.
Many vineyards in Chablis have tiny oyster fossils in the soil, dating from the secondary period (geology buffs will know what I am talking about). Perhaps this explains how chablis and oysters are a match made in heaven.
A crisp green apple nose with hints of a more rounded, creamy quality underneath. Exceptionally fresh on the palate, with crunchy granny smiths and real tangy bite.
