A Spanish bubbly – a collaboration between sherry aficionado Equipo Navajos and sparkling wine aficionado Colet. Made from 100% Xarello from the 2014 vintage. It is aged on its lees, with the added treat of Pedro Ximenez being used as the dosage. It’s really delicious with green apple and bready aromas. The palate is bone dry, and full of zesty freshness.
