Cotat Caillottes 2019
Francois Cotat’s domaine is based in one of the greatest of all the Sancerre villages, Chavignol, where he creates very unusual wines. Late picking allowing the sugars to develop which gives lovely honeyed notes balanced by the acidity the chalky (caillottes) soil gives. The wines are barrel fermented using indigenous yeasts. Cotat’s wines can age for decades but the Caillottes is his most early drinking.
Lovely nose of apple, melon and a hint of ginger. Really defined and rich yet with freshness and minerality.
