Another fortified style of sherry, Olorosos differ from Amontillados in that they receive their added spirit early on. This kills the layer of ‘flor’ in the sherry barrel immediately, so the wine ages entirely oxidatively. Unlike Finos and Manzanillas, these live for a few weeks after opening thanks to their oxidative upbringing. ‘Antique’ refers to its age—20 years.
